Miyazaki Karasumi "Ten no Itadaki," Single Lobe

Miyazaki Karasumi "Ten no Itadaki"

Genuine karasumi (dried mullet roe), refined by Miyazaki's climate and careful handwork.
"Ten no Itadaki" is a genuine karasumi from Miyazaki Prefecture, finished by carefully building up every step: assessing the strength of the ingredient itself, how the salt is used, pressing, maturing under pressure, drying and aging.

Several natural salts are used according to the condition of the roe, quietly bringing out its umami without letting the saltiness dominate.
By paying attention to the depth of flavor, the mouthfeel and the layers of the finish, we have created a soft, refined taste.

In the mouth, concentrated umami spreads slowly within its moist texture, and the aftertaste is gentle and long-lasting.
It is of course a perfect companion to drinks, and when thinly sliced and enjoyed as is, you can more deeply appreciate the delicate umami and lingering finish unique to Ten no Itadaki. Served with freshly cooked rice, its flavor is at its most beautiful. Layered on daikon radish or turnip, it brings out their freshness, and paired with mochi or pasta, it adds rich depth to the dish.

Elegance worthy of a gift, and a finish that stays in the memory.
"Ten no Itadaki" is a genuine karasumi that carefully brings Miyazaki's food culture and the aesthetics of handwork to today's table.
