Kinmon Akita Shuzo is internationally acclaimed as a pioneer of aged sake, winning the top "Champion Sake" award at the IWC, one of the world's largest wine competitions. The "X3 (X-Three)" series, born from that spirit of inquiry, overturns the conventions of sake.

■ "Three times the koji" × "fune shibori" create umami without off-flavors
We use a luxurious method that disregards profitability, using three times the usual amount of koji rice.
For pressing, we stick to the traditional "fune shibori" (pressing in a wooden vat) method with a long history.
By taking our time and applying pressure slowly, we keep off-flavors to an absolute minimum and achieve a sake in which the pure umami and aroma of the rice shine.

■ A wine-like crispness and an evolving flavor
By combining traditional skills with innovative ideas, we achieved a wine-like crispness while keeping a rich umami.
This sake is also deliberately made with less polishing for a robust character, so it can be stored at room temperature before opening.
After opening, the flavor holds up if kept refrigerated, so you can slowly enjoy how the taste opens up as it meets the air.

X3 Rose (red): made with ancient rice (red rice). A sake combining vivid rosé-like color, the complexity of red rice and a dry nuance. It pairs well with red-fleshed fish such as tuna and bonito, and with meat.
